Keep It Simple

For easy lunch ideas remember to keep it simple, be creative and use food that is easy to prepare. Todays lunch was a bed of arugula topped with yesterdays Greek Cold Grain Salad, tomato, cucumber, avocado and extra feta. The creamy texture of the Greek Salad worked great as a dressing and I added some lemon juice for extra flavor.

Delicious! Perfect light lunch!
